Vegan Menemen Recipe – Traditional Turkish breakfast

Ingredients for Vegan Menemen Recipe
Sevings: 2 people
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 bell peppers, chopped
- 2 garlic cloves, diced finely
- 3 medium tomatoes, chopped
- 1 tsp smoked sweet paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 200 g soft silken tofu, sprinkled with 1 tsp of turmeric
Garnish: chopped parsley or mint leaves
Optional: a pinch of dried oregano or thyme
To Make Vegan Menemen Recipe
- Heat up olive oil in a large pan, on a low-medium heat. Sauté chopped onion in olive oil until softened (5min) stirring frequently.
- Add chopped garlic and bell peppers.
- Stir in smoked paprika and cumin, fry them for about a minute, stirring all the time.
- Add chopped tomatoes, and season with salt and black pepper.
- Reduce on a low heat, cook until everything is soft and stewed.
- Add the silken tofu and stir gently until the tofu begins to break into pieces and is heated through.
- Sprinkle with some fresh parsley or mint leaves.
Serve with a slice of bread, olives or sliced avocado.
If you like young goat cheese go for it!
Notes:
- If you can’t find the silken tofu you can use the firm one. The texture is completely different but it’s still delicious. Use a fork to crumble into bite-sized pieces.
